Miso

Miso is made from fermented soya beans and various grains. Barley miso is the most versatile. This nutritionally rich paste is used as a digestive aid and blood tonic in macrobiotic healing. Miso is best known as the seasoning for Japanese miso soups. Any vegetable, bean or fish soup can be seasoned with miso to give it a distinctive rich flavour. Traditionally a miso soup would also contain wakame sea vegetable. You can season with fresh grated ginger root and or crushed garlic. Add one healed teaspoon per serving. Best to add the miso after the soup has cooked to avoid destroying the useful enzymes in the miso paste. Turn off the heat, dip a soup ladle into the liquid and mix the miso into the liquid in the ladle before tipping back into the soup.
